Anybody who knows me, knows i'm all about some food. Hopefully it never catches up with me. I love love love chicken and dumplings and the dumplings MUST be homemade. When I make my dumplings I use some of the chicken broth so you get the good flavor inside the dumplings themselves. I'm really into soups and chili's this time of year. I use my daddy's recipe for chili. Black beans Kidney beans and Pintos make it extra yummy. I use ground turkey because you can't tell the difference between that and hamburger and it's much better for you. A hit with most folks this time of year is my " World's Fastest Brunswick Stew." I got it out of a North Carolina cook book which is wonderful! The recipe calls for all canned stuff which is fine but I prefer fresh. I'm also funny about some foods like chunks of tomato, which won't be found in my chili, and onions, which won't be found in anything I cook! My mama wasn't much for cooking so I learned everything from "Mine" and "Granny." I am very fortunate to have them in my life. Here is the recipe for my "World's Fastest Brunswick Stew," Hope you try it out and enjoy!
1 Package Boneless Skinless Chicken Breasts
2 Cans whole kernel sweet corn
2 Cans green beans
2 Cans butter beans
2 Cans tomato soup
4-6 whole potatoes
1 whole diced onion *optional
Texas Pete or Tabasco *optional
Salt and pepper to taste
Boil chicken after washing it to make a stock
remove chicken after being cooked completely
Add canned corn with juice
drain green beans the add
drain butter beans then add
add tomato soup
dice potatoes
in a bowl of cold water wash diced potatoes THREE times to remove most starch
add cleaned potatoes
shred cooked chicken with hands or food processor
add shredded chicken
cook until potatoes are tender
add salt and pepper to taste
